1. The Classic Fairy Tales by Iona and Peter Opie. While most of the book is a collection of fairy tales, I found the introduction and the intros to each of the tales very helpful in tracking down further reading. I found a facsimile of Mure's Three Bears after hearing about it in this book, as well as tracking down the Pancatantra.

2. The Witch Must Die: The Hidden Meaning Of Fairy Tales by Sheldon Cashdan. This was so instructive about the structure of fairy tales that it almost seemed like a how-to book to create new ones.

3. The Owl, The Raven, and the Dove: The Religious Meaning of the Grimms' Magic Fairy Tales by G. Ronald Murphy. A great exploration of Christian religion, Greek philosophy, and German mythology in the Grimm Brothers, especially in the light of their revisions of the stories. I liked the Cinderella and Snow White chapters especially.
